1 piece of fresh ginger (approximately the size of your thumb),

1 onion,

2 cloves of garlic,

8 glasses of water,

Salt and pepper to taste

Instructions:

1. Clean the chicken thighs, removing the claws and skin.

2. Place the chicken thighs, ginger, onion, and garlic cloves in a large pot.

3. Add water and bring to a boil.

4. Reduce the heat and simmer for 3 to 4 hours, until the meat begins to fall off the bone.

5. Remove the chicken thighs from the pot and remove the bones. Return the meat to the soup and season with salt and pepper.
