Heat the Milk: Pour the milk into a pot and slowly heat it over medium heat until it reaches about 85-90°C (185-195°F). Stir occasionally to prevent burning.
Add the Vinegar: Once the milk is hot, remove it from the heat and stir in the vinegar or lemon juice. You’ll notice the milk curdling almost immediately.
Let it Rest: Let the mixture sit for about 5-10 minutes to allow the curds to form fully.
Strain the Curds: Line a colander with a clean cheesecloth or a fine strainer and pour the mixture through it. Let it drain for about 5-10 minutes, depending on how firm you like your cheese.
Season and Serve: Sprinkle with salt if desired, and your cheese is ready to enjoy! You can use it on toast, salads, or even in pasta dishes.
