1. Peel and grate the apples on a coarse grater.
2. In a bowl, mix the oat flakes, egg, honey, cinnamon, baking powder and a pinch of salt.
3. Add the grated apples and chopped nuts (if using) and mix everything well.
4. Form small balls from the dough and place them on a baking tray lined with baking paper.
5. Bake in a preheated oven at 180°C for about 15-20 minutes, until golden brown.
