- Prepare the crust:
In a large bowl, mix the flour, salt, and sugar. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together.
Divide the dough into two equal parts, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
- Prepare the filling:
In a large bowl, combine the sliced apples, sugar, flour, cinnamon, nutmeg, and lemon juice. Toss to coat the apples evenly.
- Assemble the pie:
Preheat your oven to 375°F (190°C).
Roll out one disk of dough on a floured surface and fit it into a 9-inch (23 cm) pie dish.
